Turkey Shepherd’s Pie is a comforting and hearty dish made with ground turkey, vegetables, and topped with creamy mashed potatoes.

  • 1 lb ground turkey
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mashed potatoes
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  3. Add ground turkey and cook until browned.
  4. Stir in carrots, peas, corn, thyme, salt, and pepper. Cook for about 5 minutes.
  5. Add chicken broth and let simmer for 10 minutes.
  6. Transfer the turkey mixture to a baking dish and spread evenly.
  7. Top with mashed potatoes, spreading them out to cover the turkey mixture.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  9. Let cool for a few minutes before serving.
