  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1 avocado, diced
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Stir in the shredded chicken, chicken broth, diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper.
  4. Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
  5. Stir in lime juice and adjust seasoning if necessary.
  6. Serve hot, topped with tortilla strips, avocado, and cilantro.

Notes

  • For extra spice, add diced jalapeños.
