  • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet.
  3. Cook chicken for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add garlic and mushrooms, sautéing until mushrooms are tender.
  5. Pour in chicken broth and bring to a simmer.
  6. Stir in heavy cream and thyme, cooking until the sauce thickens.
  7. Return chicken to the skillet, coating it in the creamy sauce.
  8. Garnish with fresh parsley before serving.

  • For a lighter version, substitute heavy cream with half-and-half.
