  • 2 egg whites

Instructions

  1. In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat until the mixture reaches 250°F (hard ball stage).
  2. While the sugar mixture is cooking, beat the egg whites in a large bowl until stiff peaks form.
  3. Once the sugar mixture reaches the desired temperature, slowly pour it into the beaten egg whites while continuing to beat.
  4. Add vanilla extract and continue to beat until the mixture holds its shape and is glossy.
  5. If using, fold in the chopped nuts.
  6. Drop spoonfuls of the mixture onto wax paper and let them cool completely.
