Ingredients

  • 3 cups all-purpose flour
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups warm water
  • 1 head of garlic
  • 2 tablespoons fresh rosemary, chopped

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Roast the garlic by wrapping it in foil and baking for 30-35 minutes until soft.
  3. In a large bowl, mix flour, salt, and yeast.
  4. Add warm water and mix until a shaggy dough forms.
  5. Stir in the roasted garlic (squeezed from the skins) and chopped rosemary.
  6. Cover the bowl with plastic wrap and let it rise for 12-18 hours at room temperature.
  7. Once risen, turn the dough onto a floured surface and shape it into a ball.
  8. Let it rest for 30 minutes while you heat a Dutch oven in the oven.
  9. Carefully place the dough into the hot Dutch oven, cover, and bake for 30 minutes.
  10. Remove the lid and bake for an additional 15-20 minutes until golden brown.
  11. Let the bread cool on a wire rack before slicing.

  • For a stronger garlic flavor, add more roasted garlic.
  • Store leftover bread in a paper bag to maintain crustiness.
  • This bread is best enjoyed fresh but can be frozen for later use.
