  • 2 cups whipped cream
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup pound cake, cubed
  • Mint leaves for garnish

Instructions

  1. In a bowl, mix the lemon curd and whipped cream until well combined.
  2. In serving glasses, layer the cubed pound cake at the bottom.
  3. Add a layer of the lemon cream mixture on top of the cake.
  4. Next, add a layer of sliced strawberries and blueberries.
  5. Repeat the layers until the glasses are filled, finishing with a layer of berries on top.
  6. Garnish with mint leaves and chill in the refrigerator for at least 30 minutes before serving.
