- 1 cup barley
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 can diced tomatoes (14.5 oz)
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
