A delicious and easy-to-make Greek Spinach & Cheese Quiche Squares recipe, perfect for meal prep.

Ingredients

  • 1 pie crust
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a greased baking dish.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
  4. Add the chopped spinach and both cheeses to the egg mixture and stir to combine.
  5. Pour the mixture into the prepared pie crust.
  6. Bake for 30-35 minutes or until the quiche is set and lightly golden on top.
  7. Allow to cool before cutting into squares.
