- 1 cup pitted dates, chopped
- 1/2 cup orange juice
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp orange juice (for glaze)
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, soak the chopped dates in orange juice for about 15 minutes.
- In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the date and orange juice mixture.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
- For the glaze, mix powdered sugar with orange juice until smooth and drizzle over the cooled cake.
