A deliciously moist loaf cake infused with the flavors of dates and orange, topped with a sweet glaze for a bakery-style finish.

  • 1 cup pitted dates, chopped
  • 1/2 cup orange juice
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp orange juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, soak the chopped dates in orange juice for about 15 minutes.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet mixture, alternating with the date and orange juice mixture.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  11. For the glaze, mix powdered sugar with orange juice until smooth and drizzle over the cooled cake.
