A delicious and crispy shrimp tempura roll that brings the taste of sushi night right to your home.

Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 8 large shrimp, peeled and deveined
  • 1/2 cup tempura batter mix
  • 1 cup vegetable oil (for frying)
  • 4 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • Soy sauce (for serving)
  • Wasabi (optional)
  • Pickled ginger (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold this mixture into the rice and let it cool.
  4. Prepare the tempura batter according to package instructions.
  5. Heat vegetable oil in a deep pan over medium-high heat.
  6. Dip each shrimp in the tempura batter and fry until golden brown, about 2-3 minutes. Drain on paper towels.
  7. Lay a sheet of nori on a bamboo sushi mat, spread a thin layer of sushi rice over the nori, leaving a small border at the top.
  8. Place a few pieces of fried shrimp, avocado slices, and cucumber strips in the center of the rice.
  9. Using the mat, roll the sushi tightly away from you, sealing the edge with a little water.
  10. Slice the roll into bite-sized pieces and serve with soy sauce, wasabi, and pickled ginger.

  • Make sure the oil is hot enough before frying the shrimp for a crispy texture.
  • You can customize the filling with other ingredients like crab or vegetables.
