- 1 1/4 cups water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 8 large shrimp, peeled and deveined
- 1/2 cup tempura batter mix
- 1 cup vegetable oil (for frying)
- 4 sheets nori (seaweed)
- 1 avocado, sliced
- 1 cucumber, julienned
- Soy sauce (for serving)
- Wasabi (optional)
- Pickled ginger (optional)
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold this mixture into the rice and let it cool.
- Prepare the tempura batter according to package instructions.
- Heat vegetable oil in a deep pan over medium-high heat.
- Dip each shrimp in the tempura batter and fry until golden brown, about 2-3 minutes. Drain on paper towels.
- Lay a sheet of nori on a bamboo sushi mat, spread a thin layer of sushi rice over the nori, leaving a small border at the top.
- Place a few pieces of fried shrimp, avocado slices, and cucumber strips in the center of the rice.
- Using the mat, roll the sushi tightly away from you, sealing the edge with a little water.
- Slice the roll into bite-sized pieces and serve with soy sauce, wasabi, and pickled ginger.
