  • 1 cup of cooked quinoa
  • 1/2 cup of chopped onions
  • 1/2 cup of shredded cheese
  • 1/4 cup of milk
  • 2 eggs
  • 1/4 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine grated carrots, cooked quinoa, chopped onions, and shredded cheese.
  3. In another bowl, whisk together milk, eggs, brown sugar, cinnamon, salt, and black pepper.
  4. Pour the wet mixture over the carrot mixture and stir until well combined.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 30-35 minutes or until the top is golden brown.
  7. Let it cool for a few minutes before serving.
