  • 6 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the cottage cheese and eggs until well combined.
  3. Add the diced bell peppers, chopped spinach, shredded cheese, salt, pepper, and garlic powder to the egg mixture and stir until evenly mixed.
  4. Grease a muffin tin with cooking spray or line with silicone muffin cups.
  5. Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  7. Allow to cool for a few minutes before removing from the muffin tin.
  8. Store in an airtight container in the refrigerator for up to 5 days.
