Delicious coffee cake muffins topped with a heavenly crumb topping, perfect for a delightful morning treat.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the sour cream and vanilla extract until combined.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. In a separate bowl, mix together the brown sugar, cinnamon, and chopped nuts for the crumb topping.
  8. Fill each muffin cup halfway with batter, sprinkle with crumb topping, then add more batter on top, finishing with more crumb topping.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool slightly before serving.

  • For a richer flavor, use brown sugar in the muffin batter.
