Delicious cherry pie bars that capture the flavor of traditional cherry pie with less effort.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, butter, salt, baking powder, and vanilla extract until crumbly.
  3. Press half of the mixture into the bottom of a greased 9×13 inch baking dish.
  4. In another bowl, mix cherry pie filling with cornstarch and lemon juice.
  5. Spread the cherry mixture over the crust in the baking dish.
  6. Sprinkle the remaining crumb mixture over the cherry filling.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • For a more intense cherry flavor, consider adding fresh cherries.
  • These bars can be served warm or cold.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
