A quick and delicious Asian-inspired salmon and noodles dish that rivals takeout, ready in just 30 minutes.

Ingredients

  • 2 salmon fillets
  • 8 oz rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • Sesame seeds for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a small bowl, mix soy sauce, sesame oil, honey, and minced garlic.
  3. Heat a non-stick skillet over medium heat and add the salmon fillets, cooking for about 4-5 minutes on each side until cooked through.
  4. Remove the salmon and add broccoli and bell pepper to the skillet, sautéing for 3-4 minutes until tender.
  5. Add the cooked noodles and sauce mixture to the skillet, tossing everything together.
  6. Serve the noodles topped with salmon, green onions, and sesame seeds.

Notes

  • Feel free to add other vegetables like carrots or snap peas.
  • For extra spice, add red pepper flakes to the sauce.
  • This dish can be made with chicken or tofu as alternatives to salmon.
